D for doppelbock, that is. Today we packaged Carburetor Doppelbock, a monster of a lager beer. Clocking in at 8.5%, it is a mouthful of pure malt, with just enough bitterness to keep it from being too sweet. It’s been slowly developing in one of our lager tanks for about 3 months, and now it’s ready. During its long, cold conditioning at near-freezing temperature, its flavors smoothed and blended, it became clear, and it developed natural carbonation. Those lucky enough to score a ticket to our next Beer Dinner on the 21st will have first crack at it, and then it will be on tap Thursday, January 22.
